Grace grows what the market forgot: mto, susa, akeyo, dek. Twelve years ago she planted a bed of them for her own kitchen. Now the bed is a field, and half of Kabondo buys seedlings from her.

She cuts at dusk, when the leaves have stopped losing water, and packs them still cool. Nothing sits overnight in a basket if she can help it.

Her log hives hang in the mango trees at the edge of the plot. She takes half the comb and leaves the rest.

It set solid in two weeks and I panicked, then read the label again. Warmed the jar and it was perfect. Real honey.

Mto, susa and akeyo in one bundle. Cooked in groundnut paste. My husband did not speak for the length of the meal.
