Millet uji with honey

From the kitchen of Rangwe, Homa Bay

The porridge given to new mothers and to anyone recovering from anything. Finger millet, fermented lightly, sweetened with raw honey.

Method

    Mix millet flour with cold water to a smooth slurry and leave overnight to sour slightly.

  2. 02

    Bring three cups of water to the boil and pour the slurry in slowly, whisking hard.

  3. 03

    Cook fifteen minutes on low — undercooked uji tastes of raw flour and everyone can tell.

  4. 04

    Take off the heat, then stir in honey. Never boil raw honey.
