Omena in groundnut sauce
From the kitchen of Silas Omondi's crew, Mbita
Small dried fish, big flavour. Fry them until they crackle, then let them settle into a groundnut sauce.
Method

Rinse the omena quickly in cold water and drain well — they should not sit wet.

Dry-fry them in a hot pan until they smell toasted, about four minutes.

Set aside. Fry onion and tomato down to a paste in the same pan.

Add loosened groundnut paste and a cup of water, then return the omena.

Simmer ten minutes without stirring too hard, or the fish will break up.
