Joseph came back to Rangwe from Nairobi in 2004 with a hoe and a theory: that the red, light soil of his father's plot could grow cassava that cooked floury instead of watery. Twenty-one seasons later, he has been proven right often enough to stop arguing about it.
He rests each block every third season and rotates groundnuts through it. It costs him yield. It buys him taste.
He digs to order. If you buy cassava from Joseph on a Tuesday, it was underground on Monday night.
